Bringing Out the Full Potential of Each Cow
Award-Winning Nakayama KUROUSHI
About Nakayama Farm
Founded in 1950, Nakayama Farm raises approximately 6,000 head of cattle in Kanoya City, Kagoshima Prefecture, located near Sakurajima—one of Japan’s most active volcanoes.

Based in Kagoshima, Japan’s leading Wagyu-producing region by number of cattle, Nakayama Farm continues to value the traditional techniques and livestock management practices passed down since its founding, while actively incorporating new technologies.
These continuous efforts have been highly recognized, earning numerous prestigious awards, including the Minister of Agriculture, Forestry and Fisheries Award at the 12th National Wagyu Competition, the Highest Honor Award at the 19th All-Japan Carcass Competition (Wagyu Olympic 2023), and the Honor Award at the Japanese Wagyu World Auction 2023, among others.

Raising KUROUSHI
The reason KUROUSHI has earned such high acclaim lies in Nakayama Farm’s unwavering philosophy: to bring out the full potential of each cow. Guided by the motto of facing every cow with sincerity and never forgetting gratitude, this belief is practiced earnestly in daily cattle raising.
This philosophy is deeply ingrained in every member of the team. Each morning begins by greeting every single cow with a simple “good morning.”
Through constant, attentive care that allows the cattle to live calmly and free from stress, the quality of the raising environment is continuously enhanced.

For example, approximately 3,000 trees have been planted between the barns.
By creating an environment closer to nature, the farm reduces stress on the cattle while also providing wind protection, shade, and contributing to CO₂ reduction.

In addition, sprinkler systems have been installed on barn roofs, and misting systems inside the barns.
These systems automatically activate once a certain temperature is reached, helping regulate temperature and humidity so the cattle can remain comfortable year-round.
Each stall is also equipped with a dedicated brushing device.
Allowing cattle to self-brush significantly reduces stress and is highly effective for hygiene management, including parasite prevention.

Commitment to Feed, Water, and Flavor
The cattle are fed a safe, specially formulated diet made from over 15 carefully selected ingredients combined with brewer’s yeast.

To enhance meat quality and umami, the feed incorporates soybean-based ingredients such as roasted soybeans and roasted soybean skins, along with sesame oil cake, koji mold, enzyme-rich blend of pineapple and cashew nuts, and bagasse chips. This formulation promotes high levels of umami-related amino acids such as glutamic acid and alanine.
Koji mold, in particular, plays a vital role in maintaining a healthy gut environment. Nakayama Farm uses the same black koji mold employed by Japan’s renowned premium shochu brands, including Maou and Moriizo.

For drinking water, the cattle are provided with pristine natural water flowing from Mt. Takakuma into the Kimotsuki Plain.
A dedicated well was drilled for the cattle, drawing fresh water from 150 meters underground, which is supplied at all times through custom-designed water cups.

The accumulation of these meticulous efforts results in Wagyu characterized by deep sweetness, rich aroma, and an exceptionally tender texture that melts in the mouth from the very first bite.
UshiDGs
“Ushi” means cow in Japanese. Under the concept of UshiDGs, Nakayama Farm promotes sustainability initiatives that cattle farmers can realistically undertake, aligning livestock farming with the principles of the SDGs.
Reducing Greenhouse Gas Emissions

To reduce CO₂ and greenhouse gas emissions, approximately 3,000 trees have been planted throughout the farm, and green curtains made from climbing vines have been installed on facility walls.
With the goal of creating a lush “forest farm” over the next decade, these efforts continue to expand year by year.
In addition, Nakayama Farm cultivates moringa in-house—a plant said to absorb up to 14 times more CO₂ than cedar trees.
Using compost produced on the farm, the harvested leaves are distributed through partnerships with neighboring farms, creating a locally connected, circular initiative.
Soil Regeneration

Manure generated during the cattle-raising process is reused and sold as compost.
By blending carefully selected lactic acid bacteria, enzymes, and fungal cultures in balanced proportions, the farm reduces reliance on chemical fertilizers while contributing to soil regeneration through natural means.
These efforts aim to build a sustainable environment that extends beyond cattle raising alone.
